Cheesy Garlic Bread Shrimp Grilled Cheese

Ingredients:

1 lb shrimp, peeled and deveined
8 slices of Italian bread or your favorite sandwich bread
1/2 cup unsalted butter, softened
4 cloves garlic, minced
1 teaspoon dried parsley
1/2 teaspoon garlic powder
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

Prepare the Garlic Butter: In a small bowl, mix the softened butter with the minced garlic, dried parsley, garlic powder, and a pinch of salt until well combined.
Cook the Shrimp: Heat the olive oil in a large skillet over medium heat. Season the shrimp with salt and pepper. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.
Assemble the Sandwiches: Spread a generous amount of garlic butter on one side of each slice of bread. On the non-buttered side of four slices, layer a portion of the shredded mozzarella cheese, cooked shrimp, and grated Parmesan cheese. Top with the remaining bread slices, buttered side out.
Grill the Sandwiches: Heat a large skillet or griddle over medium heat. Place the assembled sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve: Remove the sandwiches from the skillet and let them cool slightly. Garnish with fresh chopped parsley.
