Corned Beef and Cabbage Breakfast Sandwich

Ingredients:
2 heads baby bok choy
4 tbsp butter, divided
Salt and pepper to taste
1 cup thinly sliced cooked corned beef (approx. 4 oz)
1 small scallion, thinly sliced
1 kaiser or ciabatta roll, sliced in half
1 egg
Instructions:
Cook bok choy in butter until wilted and caramelized. Add corned beef and scallions; keep warm.
Toast the roll in butter until golden.
Fry an egg until the white is set and yolk is runny.
Assemble with bok choy, corned beef, and egg. Pop yolk before closing sandwich.
