  • Ingredients:

    4 (6 to 8-ounce) lobster tails, thawed if frozen
    4 tablespoons unsalted butter
    1/2 medium lemon
    2 cloves garlic
    1 tablespoon fresh parsley leaves
    1 teaspoon kosher salt, divided
    1 teaspoon vegetable or olive oil
    Directions:

    Thaw the lobster: Place on a plate in the refrigerator overnight.
    Soften the butter: Let 4 tablespoons of butter sit at room temperature.
    Heat the grill: Preheat to medium (350ºF to 400ºF).
    Prepare garlic butter: Chop 2 garlic cloves and 1 tablespoon parsley, mix with butter and 1/2 teaspoon salt.
    Cut lobster shells: Cut through the top shell with kitchen shears.
    Loosen meat: Gently pry the meat away from the shell.
    Split meat: Halve the meat lengthwise without cutting the bottom shell.
    Grill the first side: Brush meat with oil, season with salt, and grill flesh-side down for about 5 minutes.
    Grill the second side: Flip, add garlic butter, and cook until the meat is 135 to 140ºF.
