Ingredients:

– 8 ½ cups all-purpose flour (about 1.1 kg)

– 1.7 cups warm water (400 ml)

– 1.7 cups yogurt (400 ml)

– 1 teaspoon salt

– 1 packet dry instant yeast (10 g)

– 3 tablespoons vegetable oil

– ½ cup butter (60 g)

 

Instructions:

 

1. Prepare the Dough:

– In a large mixing bowl, combine the flour, dry instant yeast, yogurt, salt, and warm water.

– Mix together until a dough starts to form.

– Add the vegetable oil and continue kneading until the dough becomes smooth and elastic. You can do this by hand or with a stand mixer fitted with a dough hook.

 

2. Let the Dough Rise:

– Lightly oil the dough ball and the inside of the mixing bowl to prevent sticking.

– Cover the bowl with plastic wrap or a damp kitchen towel.

– Place the bowl in a warm, draft-free place for about 1 to 1.5 hours, or until the dough has doubled in size.

 

3. Shape the Dough:

– Once the dough has risen, punch it down to release the air.

– Divide the dough into 8 equal portions.

– Shape each portion into a smooth ball.

– Place the balls on a lightly floured surface, cover with a kitchen towel, and let them rest for 15 minutes.

 

4. Form the Bread:

– Preheat a non-stick frying pan or griddle over medium heat.

– Take one dough ball and flatten it with your hands into a circle or oval shape, about ¼ inch thick.

 

5. Cook the Bread:

– Place the flattened dough onto the heated pan. Cook for about 2-3 minutes on each side, or until golden brown and cooked through. You may need to adjust the heat to prevent burning.

 

6. Finish the Bread:

– While the bread is still warm, brush it generously with melted butter. This adds flavor and keeps the bread moist.

 

7. Serve:

– Turkish bread is best served warm. Enjoy it with dips, cheeses, or as a side to Mediterranean dishes.
