Ingredients
– 6 medium Russet potatoes, cut into bite size pieces

– 2 cups milk
– 1 cup heavy cream

– 2 tablespoons butter
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon thyme
– 1/2 teaspoon paprika
– 1 cup shredded cheddar cheese (optional, for topping)
– 2 green onions, sliced (optional, for topping)
– Sour cream (optional, for topping)

Directions:
1. Cook Bacon
– Cook the bacon in a large pot over medium heat until crispy.
– Remove bacon, crumble, and set aside.
– Leave about 2 tablespoons of bacon grease in the pot.

2. Sauté Vegetables
– Add butter to the pot with the bacon grease.
