Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup raw cashews
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Cooking spray
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. Prepare the Chicken: In a large bowl, combine the chicken pieces, cornstarch, salt, and pepper. Toss until the chicken is evenly coated with the cornstarch mixture. This will help create a crispy texture when air-fried.
  2. Air Fry the Chicken: Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray. Place the chicken pieces in the basket in a single layer (you may need to do this in batches). Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is golden brown and cooked through.
  3. Cook the Vegetables: While the chicken is cooking, heat a large skillet over medium heat. Add a little cooking spray or oil, then add the diced bell peppers and onion. Cook for about 5 minutes, until the vegetables are tender. Add the minced garlic and cook for another minute, until fragrant. Remove from heat and set aside.
  4. Prepare the Sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, and ground ginger. Set aside.
  5. Combine Everything: Once the chicken is done cooking in the air fryer, add it to the skillet with the cooked vegetables. Pour the sauce over the chicken and vegetables, stirring to coat everything evenly. Add the raw cashews and cook over medium heat for 2-3 minutes, until the sauce is heated through and slightly thickened.
  6. Serve: Transfer the cashew chicken to a serving dish. Garnish with sliced green onions and sesame seeds. Serve immediately over steamed rice or noodles for a complete meal.
