Slow Cooker Chicken with Flour Coating

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary)
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Chicken:

  1. Mix the Flour Coating:
    • In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika.
  2. Coat the Chicken:
    • Dredge each chicken breast in the flour mixture, ensuring it’s evenly coated. Shake off any excess flour.

Brown the Chicken:

  1. Heat the Oil:
    • In a large skillet, heat the olive oil over medium-high heat.
  2. Sear the Chicken:
    • Add the coated chicken breasts to the skillet and sear for 2-3 minutes on each side until golden brown. (You do not need to cook the chicken through, just get a nice crust.)

Slow Cook the Chicken:

  1. Add Ingredients to Slow Cooker:
    • Transfer the seared chicken breasts to the slow cooker.
    • Pour the chicken broth and heavy cream over the chicken.
    • Add the minced garlic, dried thyme, and dried rosemary.
  2. Cook:
    • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and cooked through.

Finish and Serve:

  1. Add Parmesan Cheese:
    • 30 minutes before serving, sprinkle the grated Parmesan cheese over the chicken and stir slightly to combine.
  2. Garnish:
    • Once the chicken is done, garnish with fresh parsley.
  3. Serve:
    • Serve the chicken hot, with your choice of sides such as mashed potatoes, rice, or steamed vegetables.
