Loaded Shrimp Baked Potato

Ingredients

Baked Potatoes:

  • 2 baking potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 2 tbsp butter
  • 1/2 tsp ground pepper
  • 1/2 tsp salt
  • 60 ml heavy cream
  • 200 g grated cheese

Shrimp:

  • 400 g shrimp
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili flakes
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 2 tbsp olive oil

Cajun Shrimp Cream Sauce:

  • 1 onion
  • 1 red pepper
  • 3 garlic cloves
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1 tbsp Cajun spice
  • 120 ml heavy cream

Instructions

  1. Prepare the Potatoes:
    • Preheat your oven to 200°C (400°F).
    • Poke holes all over the baking potatoes with a fork.
    • Rub the potatoes with olive oil and sprinkle with salt.
    • Wrap each potato in foil and place them on a baking dish.
    • Bake in the preheated oven for 80 minutes, or until the potatoes are soft.
  2. Cook the Shrimp:
    • While the potatoes are baking, toss the shrimp with olive oil until well coated.
    • Season the shrimp with salt, garlic powder, onion powder, chili flakes, dried parsley, and paprika.
    • Heat olive oil in a frying pan over medium heat. Cook the shrimp for 2 minutes on each side, or until they turn pink. Remove the shrimp from the pan and set aside.
  3. Make the Cajun Shrimp Cream Sauce:
    • Dice the onion and red pepper, and mince the garlic cloves.
    • In the same frying pan, melt butter and cook the onion, red pepper, and garlic for about 8 minutes, or until soft.
    • Season with salt and Cajun spice.
    • Pour in the heavy cream and cook for an additional minute, then remove from heat.
  4. Prepare the Potato Filling:
    • Cut the tops off the baked potatoes. Use a spoon to scoop out the potato flesh into a bowl, creating a boat shape.
    • Season the potato flesh with melted butter, salt, and ground pepper.
    • Mash the potatoes with a fork. Stir in heavy cream and grated cheese until well combined.
  5. Assemble and Bake:
    • Fill the potato boats with the mashed potato mixture.
    • Top with Cajun shrimp cream sauce and additional grated cheese.
    • Place the filled potatoes back on the baking dish and bake in the preheated oven at 200°C (400°F) for 15 minutes, or until the tops are golden and bubbly.
    • Remove from the oven and garnish with fresh parsley before serving.
