Ingredients

  • 1 bone-in prime rib roast (6-8 pounds)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Garlic cloves (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 500°F (260°C).
  2. Prepare the Roast:
    • Place the prime rib roast on a rack in a roasting pan.
    • Rub the roast with olive oil and season generously with salt and pepper.
    • If desired, use a paring knife to insert garlic cloves into the roast for added flavor.
  3. Roast at High Temperature:
    • Place the roasting pan in the preheated oven and roast the prime rib at 500°F (260°C) for 15 minutes.
  4. Reduce Temperature:
    • After 15 minutes, reduce the oven temperature to 325°F (160°C) and continue roasting.
    • Use a meat thermometer to monitor the internal temperature of the roast:
      • For medium-rare, aim for 135°F (57°C).
      • For medium, aim for 140°F (60°C).
      • For well-done, aim for 150°F (66°C).
  5. Rest the Roast:
    • Once the roast reaches your desired level of doneness, remove it from the oven.
    • Let it rest for 15-20 minutes before slicing. This allows the juices to redistribute, ensuring a tender and flavorful roast.
