Beef Enchiladas
Ingredients:
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (4 oz) diced green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups enchilada sauce (store-bought or homemade)
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 8 large flour tortillas
Optional Toppings:
- Sour cream
- Guacamole
- Chopped cilantro
- Sliced green onions
- Diced tomatoes
Instructions:
Preheat Oven:
- Preheat your oven to 375°F (190°C).
Prepare Filling:
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
- Stir in the ground cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for another minute.
- Add the diced green chilies and black beans. Mix well and cook for another 2-3 minutes until heated through.
Assemble Enchiladas:
- Spread a thin layer of enchilada sauce (about 1/2 cup) on the bottom of a 9×13 inch baking dish.
- Place a scoop of the beef mixture in the center of each flour tortilla. Sprinkle some shredded cheddar and Monterey Jack cheese over the beef mixture.
- Roll up the tortillas tightly and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the rolled enchiladas, spreading it evenly.
- Sprinkle the remaining shredded cheese over the top.
Bake Enchiladas:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
- Remove from the oven and let cool for a few minutes before serving.
- Serve with optional toppings such as sour cream, guacamole, chopped cilantro, sliced green onions, and diced tomatoes.
