Pineapple Bread

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple, undrained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup shredded coconut (optional)

Instructions:

Preheat Oven:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.

Prepare Dry Ingredients:

  1. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.

Prepare Wet Ingredients:

  1. In another bowl, beat the eggs. Add the vegetable oil, vanilla extract, and crushed pineapple with its juice. Mix well.

Combine Ingredients:

  1. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  2. If using, fold in the chopped nuts and shredded coconut.

Bake:

  1. Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  3. If the top starts to brown too quickly, cover it loosely with aluminum foil for the remaining baking time.

Cool:

  1. Remove the bread from the oven and let it cool in the pan for about 10 minutes.
  2. Transfer the bread to a wire rack to cool completely before slicing.
