Ingredients:

  • 2 pounds ground beef
  • 1/2 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons Italian seasoning
  • 2 cans (14.5 oz each) tomato sauce
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cups beef broth
  • 1 box dry uncooked macaroni
  • 1 cup frozen peas

Instructions:

Prepare Beef and Vegetables:

  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Add the diced onions and peppers to the skillet. Cook until the vegetables are tender.
  3. Add the minced garlic and cook for another minute.

Combine in Slow Cooker:

  1. Transfer the meat and vegetable mixture to a 6-quart slow cooker.
  2. Add the diced green and red bell peppers, Italian seasoning, salt, pepper, tomato sauce, diced tomatoes, and beef broth to the slow cooker.
  3. Stir to combine all ingredients well.

Cook:

  1. Cover the slow cooker and cook on high for 3.5 hours.

Prepare Pasta:

  1. One hour before the goulash is done, cook the macaroni according to the package directions.

Combine and Finish:

  1. Thirty minutes before serving, stir the cooked pasta and frozen peas into the slow cooker.
  2. Cover and let sit for the remaining 30 minutes to heat through.

Serve:

  1. Garnish as desired and serve hot.
