Tender BBQ Ribs

 Tender BBQ Ribs

**Ingredients:**

**Ribs:**
* 3 pounds baby back ribs (2 slabs)
* 2 onions, sliced
* 4 garlic cloves, sliced

**Rib Rub (optional):**
* 1 tablespoon paprika
* 1 tablespoon brown sugar
* 3/4 teaspoon garlic powder
* 3/4 teaspoon onion powder
* 1/2 teaspoon black pepper
* 1/2 teaspoon lemon pepper
* 1/2 teaspoon salt, or to taste

**BBQ Sauce:**
* 1/2 cup BBQ sauce
* 1/2 cup chili sauce or extra BBQ sauce
* 1/4 cup ketchup

**Instructions:**

1. Preheat the oven to 275°F (135°C). Mix the Rib Rub ingredients together if using.
2. Remove the white membrane from the back side of the ribs (the side with less meat). It should come off easily. Pat the ribs dry and check for any small bone fragments.
3. Season the ribs with salt and pepper, or generously sprinkle with the rib rub and massage into the ribs.
4. Place the ribs on an aluminum foil-lined tray, meaty side down, and cover with sliced onions and garlic.
5. Cover and seal with another piece of aluminum foil.
6. Cook the ribs for 2 hours. Carefully open a corner of the sealed foil and remove a small piece of meat to check if the ribs are tender. If not, cook for another 20-30 minutes and check again.
7. Meanwhile, combine the BBQ sauce ingredients together.
8. Remove the ribs and discard the juices, onions, and garlic. Brush the ribs with olive oil and generously brush with BBQ sauce.
9. Grill or broil over medium-high heat for 5-10 minutes or until charred.
