Ingredients:
For the Vanilla Dough:
- 1 cup sugar
- 125g butter (about 1/2 cup)
- 2 eggs
- 2 teaspoons vanilla extract
- 1½ cups all-purpose flour
For the Banana Filling:
- 2 ripe bananas, mashed
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
For Assembly:
- 1 egg, beaten (for egg wash)
- Sugar and cinnamon mixture (for sprinkling on top)
Directions:
- Prepare the Vanilla Dough:
- In a mixing bowl, cream together the sugar and butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the flour, mixing until the dough comes together.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Make the Banana Filling:
- In a medium bowl, combine the mashed bananas, brown sugar, cinnamon, and lemon juice. Mix well and set aside.
- Assemble the Turnovers:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.
- Cut the dough into squares or circles, depending on your preference.
- Place a spoonful of banana filling in the center of each dough piece.
- Fold the dough over the filling to form a triangle or half-moon shape, and press the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
- Brush the tops of the turnovers with the beaten egg, and sprinkle with a mixture of sugar and cinnamon.
- Bake:
- Place the turnovers on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
- Cool and Serve:
- Allow the turnovers to cool slightly on a wire rack before serving.
Tips:
- Chill the Dough: Keeping the dough chilled helps it to roll out more easily and maintain its shape during baking.
- Banana Ripeness: Use ripe bananas for a sweeter and more flavorful filling.
- Make Ahead: You can prepare the turnovers ahead of time, freeze them before baking, and bake from frozen. Just add a few extra minutes to the baking time.
Enjoy these delicious banana turnovers warm, with a cup of coffee or tea!
