Chicken and Dumplings
Ingredients:
- 1 can cream of chicken soup
- 1 box (32 oz) chicken broth
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp vegetable oil
- Optional: 1 cup mixed vegetables (carrots, peas, celery)
Instructions:
- Prepare the Chicken:
- In a large pot, add the chicken broth and bring it to a boil.
- Add the chicken breasts to the boiling broth. Reduce heat to a simmer and cook until the chicken is cooked through, about 20 minutes.
- Remove the chicken from the pot and shred it using two forks. Set aside.
- Make the Soup Base:
- Add the can of cream of chicken soup to the broth. Stir until well combined.
- If you’re adding mixed vegetables, add them now. Season with salt and pepper to taste.
- Prepare the Dumplings:
- In a medium bowl, combine the flour, baking powder, and salt.
- Stir in the milk and vegetable oil until the mixture forms a dough.
- Drop spoonfuls of the dough into the simmering soup. Be sure to drop the dough all over the surface to make small dumplings.
- Cook the Dumplings:
- Cover the pot with a lid and let the dumplings cook for 15 minutes. Do not lift the lid while the dumplings are cooking to ensure they cook properly.
- Combine and Serve:
- Add the shredded chicken back into the pot and stir gently to combine.
- Let everything heat through for a few more minutes.
- Enjoy:
