Homemade Breakfast Sandwiches
My husband and I love the frozen breakfast sandwiches from the grocery store, but they get pretty pricey for only 4 in a box. So, I decided to make my own. They are super easy and cheap! Using eggs, pork sausage patties, English muffins, and sliced cheese, it costs about $10 to make a dozen!
Ingredients:
- 12 English muffins, split
- 12 eggs
- 12 pork sausage patties (Kroger brand recommended)
- 12 slices of cheese (your choice)
- Olive oil (for greasing)
- Salt and pepper to taste
Instructions:
1. Prepare the Sausage Patties:
- Preheat your oven to 350°F (375°F for convection).
- Place the pork sausage patties on a sheet pan.
- Cook in the oven for 15-20 minutes, or until fully cooked, flipping halfway through.
2. Cook the Eggs:
- Lightly grease egg molds with olive oil.
- Crack an egg into each mold and place on a baking sheet.
- Bake in the preheated oven at 350°F (375°F for convection) for 17 minutes for fully set yolks. For runny yolks, reduce the baking time.
- Sprinkle with salt and pepper.
3. Assemble the Sandwiches:
- Toast the English muffins if desired.
- Place one cooked sausage patty on the bottom half of each English muffin.
- Top with a baked egg and a slice of cheese.
- Cover with the top half of the English muffin.
4. Storage and Reheating:
- Wrap each sandwich in plastic wrap or aluminum foil.
- Store in the freezer for up to one month.
5. To Reheat:
- Unwrap the sandwich and wrap it in a paper towel.
- Microwave for 1 minute and 30 seconds, or until heated through.
