Homemade Hungarian Goulash Recipe
Hungarian goulash is a hearty and flavorful stew that features tender chunks of beef simmered with onions, paprika, and other spices. It’s a classic Hungarian dish that embodies the rich culinary traditions of the region. Here’s a traditional recipe for homemade Hungarian goulash:
Ingredients:
- 2 tablespoons vegetable oil or lard
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 2 pounds (900 grams) beef chuck, cut into 1-inch cubes
- 2 tablespoons sweet paprika (preferably Hungarian)
- 1 tablespoon caraway seeds, crushed
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme (optional)
- 1 bell pepper, chopped (red or green)
- 2 medium tomatoes, peeled and chopped, or 1 can (14.5 ounces) diced tomatoes
- 4 cups beef broth
- 2 medium potatoes, peeled and cut into 1-inch cubes
- 2 medium carrots, peeled and sliced
- 1-2 tablespoons tomato paste
- Salt and black pepper, to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- Chopped fresh parsley, for garnish (optional)
Instructions:
Step 1: Sauté the Aromatics
- Heat the vegetable oil or lard in a large pot or Dutch oven over medium heat.
- Add the chopped onions and cook until they are soft and translucent, about 5-7 minutes.
- Add the minced garlic and cook for another 1 minute.
Step 2: Brown the Beef
- Increase the heat to medium-high and add the beef cubes.
- Cook the beef until browned on all sides, about 8-10 minutes.
Step 3: Add Spices and Vegetables
- Stir in the sweet paprika, caraway seeds, and dried marjoram (and thyme if using).
- Add the chopped bell pepper and tomatoes (or canned tomatoes), stirring well to combine.
- Cook for about 5 minutes, allowing the spices to toast slightly and the tomatoes to break down.
Step 4: Simmer the Stew
- Pour in the beef broth and add the tomato paste.
- Stir to combine, then bring the mixture to a boil.
- Reduce the heat to low and cover the pot. Let it simmer gently for about 1 hour, or until the beef is tender.
Step 5: Add Potatoes and Carrots
- Add the potatoes and carrots to the pot.
- Continue to simmer, uncovered, for an additional 20-30 minutes, or until the vegetables are tender and the stew has thickened slightly.
Step 6: Adjust Seasoning and Thicken (if needed)
- Season with salt and black pepper to taste.
- If you prefer a thicker stew, mix 2 tablespoons of flour with a little water to create a slurry and stir it into the stew. Cook for an additional 5-10 minutes until thickened.
Step 7: Garnish and Serve
- Garnish with chopped fresh parsley, if desired.
- Serve the goulash hot, with crusty bread or dumplings on the side.
Enjoy your homemade Hungarian goulash—a warming and satisfying dish that’s perfect for any occasion!
