Introduction: Never get tired of this amazing soup. You can use store-bought wontons, but I like to make mine from scratch—the flavor is unbeatable! There’s something special about the delicate dumplings floating in a rich, savory broth that warms the soul. Ingredients:

For the Wontons:

  • 1/2 lb ground pork
  • 1/4 cup finely chopped shrimp (optional)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine (optional)
  • 1/2 teaspoon grated ginger
  • 1 clove garlic, minced
  • 2 green onions, finely chopped
  • Wonton wrappers
  • Water (for sealing wontons)

For the Soup:

  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, sliced
  • 2-3 green onions, sliced
  • Baby bok choy or spinach (optional)
  • Salt and pepper, to taste

Directions:

  1. Prepare the Wonton Filling:
    • In a bowl, combine ground pork, chopped shrimp, soy sauce, sesame oil, rice wine (if using), grated ginger, minced garlic, and chopped green onions. Mix well.
  2. Assemble the Wontons:
    • Place a small spoonful of filling in the center of a wonton wrapper.
    • Moisten the edges of the wrapper with water, then fold it in half diagonally to form a triangle. Press the edges to seal.
    • Optionally, bring the two corners of the triangle together and press them to form a traditional wonton shape.
    • Repeat with remaining filling and wrappers.
  3. Make the Soup Base:
    • In a large pot, bring the chicken broth to a boil.
    • Add soy sauce, sesame oil, minced garlic, sliced ginger, and sliced green onions.
    • Let the broth simmer for 5-10 minutes to infuse the flavors.
  4. Cook the Wontons:
    • Carefully add the wontons to the simmering broth.
    • Cook for 3-5 minutes, until the wontons float to the surface and are fully cooked.
  5. Add Vegetables (Optional):
    • If using baby bok choy or spinach, add them to the soup and cook until wilted.
  6. Serve:
    • Taste the soup and season with salt and pepper if needed.
    • Ladle the soup into bowls, ensuring each bowl has wontons and broth.
    • Garnish with extra green onions, if desired.
