- Melt-in-Your-Mouth Lemon Cake
Ingredients:
- For the Cake:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 cup sour cream
- ¼ cup lemon juice (freshly squeezed)
- 1 tbsp lemon zest (from 1 lemon)
- 1 tsp vanilla extract
- For the Lemon Glaze:
- 1 cup powdered sugar
- 2-3 tbsp lemon juice (freshly squeezed)
- 1 tbsp lemon zest (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
- Add Eggs and Flavors: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and lemon juice. Begin and end with the dry ingredients. Mix just until combined.
- Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Prepare the Glaze: In a small bowl, mix the powdered sugar with lemon juice until smooth. Adjust the consistency with more lemon juice if needed. Stir in the lemon zest if using.
- Glaze the Cake: Once the cake is completely cooled, drizzle the lemon glaze over the top.
This lemon cake is incredibly moist and has a delightful tangy flavor, making it irresistible. Enjoy!
