Stuffed Pork Chops

Ingredients:

  • 4 thick-cut pork chops
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup unsalted butter, melted

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Stuffing:
    • In a bowl, combine the breadcrumbs, Parmesan cheese, chopped parsley, thyme leaves, minced garlic, and melted butter. Mix well.
  3. Stuff the Pork Chops:
    • Cut a pocket into each pork chop by slicing horizontally through the middle, making sure not to cut all the way through.
    • Season the inside and outside of the pork chops with salt and pepper.
    • Stuff each pork chop with the breadcrumb mixture.
  4. Sear the Pork Chops:
    • In a large oven-safe skillet, heat olive oil over medium-high heat.
    • Sear the pork chops for about 2-3 minutes on each side until golden brown.
  5. Bake the Pork Chops:
    • Pour the chicken broth into the skillet.
    • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pork chops are cooked through and the stuffing is golden and crispy.
  6. Serve:
    • Remove the pork chops from the oven and let them rest for a few minutes before serving.
    • Garnish with additional chopped parsley, if desired.
