Stuffed Pork Chops
Ingredients:
- 4 thick-cut pork chops
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup unsalted butter, melted
Directions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Stuffing:
- In a bowl, combine the breadcrumbs, Parmesan cheese, chopped parsley, thyme leaves, minced garlic, and melted butter. Mix well.
- Stuff the Pork Chops:
- Cut a pocket into each pork chop by slicing horizontally through the middle, making sure not to cut all the way through.
- Season the inside and outside of the pork chops with salt and pepper.
- Stuff each pork chop with the breadcrumb mixture.
- Sear the Pork Chops:
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Sear the pork chops for about 2-3 minutes on each side until golden brown.
- Bake the Pork Chops:
- Pour the chicken broth into the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pork chops are cooked through and the stuffing is golden and crispy.
- Serve:
- Remove the pork chops from the oven and let them rest for a few minutes before serving.
- Garnish with additional chopped parsley, if desired.
