Ingredients:

  • 1 lb. ground beef
  • 1 packet taco seasoning mix
  • 1/4 cup water
  • 1 can (10 oz.) diced tomatoes with green chilies, drained
  • 1 can (15 oz.) refried beans
  • 2 cups crushed tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped green onions
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Ground Beef:
    • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
    • Add the taco seasoning mix and water to the skillet. Stir well and let it simmer for a few minutes until the mixture thickens.
    • Stir in the drained diced tomatoes with green chilies.
  3. Layer the Casserole:
    • Spread the refried beans evenly over the bottom of a 9×13-inch baking dish.
    • Sprinkle a layer of crushed tortilla chips over the refried beans.
    • Spoon the seasoned ground beef mixture evenly over the tortilla chips.
    • Sprinkle a generous layer of shredded cheese over the beef mixture.
  4. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  5. Top and Serve:
    • Remove from the oven and let it cool slightly. Top with sour cream, chopped tomatoes, green onions, black olives, and fresh cilantro, if desired.
