Mexican Taco Casserole
This Mexican Taco Casserole is a crowd-pleaser with layers of seasoned ground beef, melty cheese, and all your favorite taco toppings. It’s perfect for a family dinner or a festive gathering!
Ingredients:
- 1 lb. ground beef
- 1 packet taco seasoning mix
- 1/4 cup water
- 1 can (10 oz.) diced tomatoes with green chilies, drained
- 1 can (15 oz.) refried beans
- 2 cups crushed tortilla chips
- 2 cups shredded Mexican blend cheese
- 1 cup sour cream
- 1/2 cup chopped tomatoes
- 1/2 cup chopped green onions
- 1/4 cup sliced black olives (optional)
- Fresh cilantro, chopped (optional, for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook the Ground Beef:
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir well and let it simmer for a few minutes until the mixture thickens.
- Stir in the drained diced tomatoes with green chilies.
- Layer the Casserole:
- Spread the refried beans evenly over the bottom of a 9×13-inch baking dish.
- Sprinkle a layer of crushed tortilla chips over the refried beans.
- Spoon the seasoned ground beef mixture evenly over the tortilla chips.
- Sprinkle a generous layer of shredded cheese over the beef mixture.
