Fried Chicken Wings
Ingredients:
- 2 lbs chicken wings
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil (for frying)
Instructions:
- Marinate the chicken wings in buttermilk for at least 1 hour (overnight preferred).
- In a large bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.
- Heat oil in a deep fryer or large skillet to 350°F (175°C).
- Dredge the marinated chicken wings in the flour mixture, ensuring they are well-coated.
- Fry the wings in batches for about 8-10 minutes, or until golden brown and crispy.
- Drain on paper towels and serve.
Macaroni and Cheese
Ingredients:
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 cups milk
- 1/4 cup butter
- 2 1/2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
Instructions:
- Preheat oven to 350°F (175°C). Cook macaroni according to package instructions, drain, and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute.
- Gradually whisk in milk, and cook until the mixture thickens, about 5 minutes.
- Remove from heat and stir in cheeses until melted. Add salt, pepper, and paprika.
- Combine cheese sauce with macaroni and pour into a baking dish.
- Bake for 20-25 minutes, or until the top is golden brown and bubbly.
Collard Greens
Ingredients:
- 1 lb collard greens, washed and chopped
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 smoked ham hock or 4 strips of bacon
- 4 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.
- Add ham hock or bacon and cook for a few minutes.
- Add collard greens and cook until they start to wilt.
- Pour in chicken broth, salt, black pepper, and red pepper flakes.
- Bring to a boil, then reduce heat to low and simmer for about 45 minutes to 1 hour, until greens are tender.
Candied Yams
Ingredients:
- 4 large yams or sweet potatoes, peeled and sliced
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup water
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Instructions:
- Preheat oven to 350°F (175°C).
- In a saucepan, melt butter and stir in brown sugar, water, cinnamon, and nutmeg. Cook until the sugar dissolves.
- Place sliced yams in a baking dish and pour the sugar mixture over them.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, until yams are tender and caramelized.
Cornbread
Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
Instructions:
- Preheat oven to 400°F (200°C). Grease a baking dish or cast-iron skillet.
- In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, mix milk, oil, and egg. Add to the dry ingredients and stir until just combined.
- Pour batter into the prepared baking dish and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
