Cheesy Sausage and Egg Muffins
Ingredients:
- 1 lb (450g) ground sausage
- 8 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese (plus extra for topping)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Non-stick cooking spray
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Grease a muffin tin with non-stick cooking spray or line it with cupcake liners.
- Cook the Sausage:
- In a skillet, cook the ground sausage over medium heat until fully cooked and browned. Drain any excess grease and set aside.
- Prepare the Egg Mixture:
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Assemble the Muffins:
- Divide the cooked sausage evenly among the muffin cups. Sprinkle with the shredded cheddar and mozzarella cheese, and add green onions if using.
- Pour the egg mixture over the sausage and cheese in each muffin cup, filling them almost to the top. Sprinkle a little extra cheese on top of each muffin.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the muffins are set and the tops are golden brown.
- Cool and Serve:
- Allow the muffins to cool slightly before removing them from the tin. Serve warm, and enjoy!
