Ingredients:

  • 1 lb (450g) ground sausage
  • 8 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Non-stick cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease a muffin tin with non-stick cooking spray or line it with cupcake liners.
  2. Cook the Sausage:
    • In a skillet, cook the ground sausage over medium heat until fully cooked and browned. Drain any excess grease and set aside.
  3. Prepare the Egg Mixture:
    • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Assemble the Muffins:
    • Divide the cooked sausage evenly among the muffin cups. Sprinkle with the shredded cheddar and mozzarella cheese, and add green onions if using.
    • Pour the egg mixture over the sausage and cheese in each muffin cup, filling them almost to the top. Sprinkle a little extra cheese on top of each muffin.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the muffins are set and the tops are golden brown.
  6. Cool and Serve:
    • Allow the muffins to cool slightly before removing them from the tin. Serve warm, and enjoy!
