#### Ingredients:

– **¼ cup all-purpose flour**

– **1 lb beef liver, trimmed and sliced into 1/4-inch strips**

– **¼-½ cup unsalted butter**

– **½ tsp salt**

– **⅛ tsp black pepper**

– **Oil (such as vegetable or canola)**

– **1-2 tbsp fresh sage, finely minced**

– **2 cups onions, thinly sliced**

– **½ cup beef stock**

– **1 tbsp fresh Italian parsley, minced**

– **¼ cup dry white wine**

 

#### Instructions:

 

1. **Prepare the Liver**:

– Rinse the beef liver under cold water and pat it dry with paper towels. Trim any connective tissue and slice into thin strips.

– Place the flour in a shallow dish. Dredge the liver strips in flour, shaking off any excess.

 

2. **Sauté the Onions**:

– Heat 1-2 tbsp of oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they become soft and caramelized, about 10-15 minutes. Remove the onions from the skillet and set aside.

 

3. **Cook the Liver**:

– In the same skillet, add ¼-½ cup of butter over medium-high heat. Once the butter is melted and starts to foam, add the floured liver strips in a single layer. Cook for about 1-2 minutes per side until browned and cooked through, but still tender. Avoid overcrowding the pan; cook in batches if necessary. Remove the liver from the skillet and set aside.

 

4. **Deglaze the Pan**:

– In the same skillet, add the white wine and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the wine simmer for about 1-2 minutes to reduce slightly.

 

5. **Create the Sauce**:

– Add the beef stock to the skillet and continue to simmer for another 3-4 minutes until the sauce is slightly reduced and thickened.

 

6. **Combine Ingredients**:

– Return the cooked liver to the skillet, along with the caramelized onions. Stir to coat the liver and onions with the sauce. Cook for another 2-3 minutes to heat through and allow flavors to meld.

 

7. **Finish and Serve**:

– Stir in the minced sage and parsley. Adjust seasoning with additional salt and pepper to taste. Serve hot.
