### Ingredients:

– 1 cup corn kernels (fresh or canned)

– 1 cup cornmeal

– 1 cup all-purpose flour

– 1 cup sugar

– 1/2 cup butter (room temperature)

– 2 eggs

– 1 cup milk

– 1 tablespoon baking powder

– 1 pinch of salt

 

### Instructions:

 

1. **Preheat the oven** to 180°C (350°F). Grease your muffin tins or line them with paper liners.

 

2. **Prepare the corn**: If using fresh corn, steam or boil it for about 10 minutes, then drain. If using canned corn, drain it well.

 

3. **Blend the corn**: In a blender, blend the corn with the milk until smooth.

 

4. **Prepare the dry ingredients**: In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.

 

5. **Prepare the wet ingredients**: In another bowl, beat the butter and eggs until creamy. Add the corn and milk mixture and mix well.

 

6. **Combine the mixtures**: Fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.

 

7. **Fill the muffin tins**: Spoon the batter into the muffin tins, filling each cup about 2/3 full.

 

8. **Bake**: Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

 

9. **Cool**: Let the muffins cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
