Mushroom Rice­

 

**Ingredients:**

– 2 tbsp unsalted butter

– 1 onion, finely chopped

– 2 garlic cloves, minced

– 600g (1.3 lbs) mushrooms, sliced

– 1 cup long grain white rice, uncooked

– 1 1/2 cups chicken broth

– 3/4 cup water

– 1 tsp salt

– 1/4 tsp black pepper

– 2 tbsp fresh parsley, chopped

 

**Instructions:**

1. Melt the butter in a large saucepan over medium-high heat.

2. Add the finely chopped onion and minced garlic to the pan, sautéing them until softened, about 3 minutes.

3. Add the sliced mushrooms to the pan and cook them until they release their juices and become golden, about 5 minutes.

4. Stir in the uncooked rice, mixing it well with the mushroom mixture.

5. Pour in the chicken broth, water, salt, and pepper. Stir to combine.

6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pan and cook for 15 minutes, or until the rice is tender and the liquid is absorbed.

7. Once the cooking time is up, remove the pan from the heat and let it sit, covered, for 5 minutes.

8. Fluff the rice with a fork and stir in the fresh parsley before serving.
