### Chicken Rice Casserole

**Ingredients:**

– 2 cups uncooked long grain white rice

– 4 boneless, skinless chicken breasts

– 1 can (10.5 oz) cream of mushroom soup

– 1 can (10.5 oz) cream of chicken soup

– 1 can (14.5 oz) chicken broth

– 1 cup water

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon dried thyme

– Salt and pepper to taste

– 1 cup shredded cheddar cheese (optional)

– Fresh parsley for garnish (optional)

**Instructions:**

1. **Preheat the Oven**: Preheat your oven to 350°F (175°C).

2. **Prepare the Rice Mixture**: In a large mixing bowl, combine the uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, water, garlic powder, onion powder, dried thyme, salt, and pepper. Stir until well combined.

3. **Assemble the Casserole**: Pour the rice mixture into a 9×13-inch baking dish. Place the chicken breasts on top of the rice mixture, and season the chicken with additional salt, pepper, and a sprinkle of thyme if desired.

4. **Bake**: Cover the dish tightly with aluminum foil and bake for 1 hour. After 1 hour, check the rice and chicken for doneness. If the rice needs more time, recover the dish and bake for an additional 10-15 minutes.

5. **Add Cheese (Optional)**: If you’re adding cheese, sprinkle it on top of the casserole and return it to the oven, uncovered, for an additional 5 minutes, or until the cheese is melted and bubbly.

6. **Garnish and Serve**: Once the casserole is done, remove it from the oven and let it sit for a few minutes before serving. Garnish with fresh parsley if desired.

Enjoy your Chicken Rice Casserole! It’s a comforting and easy dish that’s perfect for busy weeknights.
