– 2 lbs (about 1 kg) of baby potatoes or Yukon Gold potatoes, cut into 1-inch chunks

– 1 teaspoon onion powder

– 1 teaspoon smoked paprika (optional, for extra flavor)

– 1 teaspoon dried rosemary or thyme (optional)

– Salt and pepper to taste

1. **Preheat the Oven:**

– Preheat your oven to 425°F (220°C).

 

2. **Prepare the Potatoes:**

– If using baby potatoes, you can cut them in half. If using Yukon Gold, cut them into 1-inch chunks. Rinse the potatoes in cold water to remove excess starch and then pat them dry with a clean kitchen towel.
