### **Ingredients:**

 

#### **For the Chicken Marinade:**

– 2 lb (1 kg) chicken thigh fillets, boneless and skinless

– 3 large garlic cloves, minced (approximately 3 teaspoons)

– 1 tablespoon white wine vinegar (or red wine or apple cider vinegar)

– 3 tablespoons lemon juice

– 1 tablespoon extra virgin olive oil

– 3 tablespoons Greek yogurt, preferably full-fat

– 1 1/2 tablespoons dried oregano

– 1 teaspoon salt

– Black pepper, to taste

 

#### **For the Tzatziki Sauce:**

– 2 cucumbers (to make about 1/2 to 3/4 cup grated cucumber after squeezing out juice)

– 1 1/4 cups Greek yogurt, preferably full-fat

– 1 tablespoon lemon juice

– 1 tablespoon extra virgin olive oil (or more if you want a richer sauce)

– 1 garlic clove, minced

– 1/4 teaspoon salt

– Black pepper, to taste

 

#### **For the Salad:**

– Tomatoes, deseeded and diced (use as many as you prefer)

– 3 cucumbers, diced

– 1/2 red Spanish onion, peeled and finely chopped

– 1/4 cup fresh parsley leaves (optional)

– Salt and pepper, to taste

 

#### **To Serve:**

– 4 to 6 pita breads or flatbreads

 

### **Instructions:**

 

#### **1. Marinate the Chicken:**

1. In a large mixing bowl, combine the minced garlic, white wine vinegar, lemon juice, extra virgin olive oil, Greek yogurt, dried oregano, salt, and black pepper. Stir until well mixed.

2. Add the chicken thigh fillets to the bowl, ensuring each piece is thoroughly coated with the marinade.

3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours. For the best flavor, marinate the chicken overnight.

 

#### **2. Prepare the Tzatziki Sauce:**

1. Peel and grate the cucumbers. Once grated, squeeze out the excess juice using a clean cloth, paper towel, or by placing the cucumber in a sieve and pressing down with a spoon. You should end up with about 1/2 to 3/4 cup of grated cucumber.

2. In a mixing bowl, combine the grated cucumber, Greek yogurt, lemon juice, extra virgin olive oil, minced garlic, salt, and black pepper. Mix until smooth.

3. Cover the bowl and refrigerate the tzatziki sauce until ready to serve. The sauce can be made a day ahead for deeper flavors.

 

#### **3. Make the Salad:**

1. In a large bowl, combine the diced tomatoes, cucumbers, and finely chopped red Spanish onion.

2. If using, add the fresh parsley leaves.

3. Season the salad with salt and pepper to taste. Toss everything together gently until well combined.

 

#### **4. Cook the Chicken:**

1. Preheat your grill or a large skillet over medium-high heat.

2. Remove the chicken from the marinade and shake off any excess marinade. Place the chicken on the grill or skillet.

3. Cook the chicken for about 5-7 minutes on each side, or until fully cooked through and slightly charred. The internal temperature should reach 165°F (75°C).

4. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Then, slice the chicken into strips.

 

#### **5. Assemble the Gyros:**

1. Warm the pita or flatbreads on the grill, in the oven, or in a dry skillet.

2. Place a few slices of the cooked chicken onto each warm pita or flatbread.

3. Top with a generous spoonful of the prepared salad.

4. Drizzle with tzatziki sauce, adding as much as you like.

5. Fold the bread over the filling to create a wrap, and serve immediately.
