### Ingredients:

– **6-8 ripe peaches** (about 6 cups, peeled and sliced)

– **1 cup granulated sugar**

– **1/4 cup brown sugar**

– **1/4 teaspoon salt**

– **1 teaspoon vanilla extract**

– **1 teaspoon ground cinnamon**

– **1/4 teaspoon ground nutmeg**

– **2 teaspoons lemon juice**

– **1 cup all-purpose flour**

– **1 cup granulated sugar**

– **1 tablespoon baking powder**

– **1/4 teaspoon salt**

– **1 cup milk**

– **1/2 cup unsalted butter**, melted

 

### Instructions:

 

1. **Preheat your oven** to 375°F (190°C).

 

2. **Prepare the peaches**: In a large mixing bowl, combine the sliced peaches, 1 cup of granulated sugar, brown sugar, salt, vanilla extract, cinnamon, nutmeg, and lemon juice. Stir well and let the mixture sit for about 10 minutes to allow the peaches to release their juices.

 

3. **Make the batter**: In a separate mixing bowl, combine the flour, 1 cup of granulated sugar, baking powder, and salt. Stir in the milk until just combined. Pour in the melted butter and stir until the batter is smooth.

 

4. **Assemble the cobbler**: Pour the peach mixture into a 9×13-inch baking dish, spreading it out evenly. Pour the batter over the peaches, making sure it covers the fruit as much as possible.
