Irresistible Strawberry Cake
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar (adjust to taste)
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 cup fresh strawberries, diced
1/2 cup strawberry jam
1 1/2 cups powdered sugar
2-3 tablespoons strawberry puree (for glaze)
Fresh strawberries for garnish
Directions:
Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Add the vanilla extract and mix to combine.
Gradually add the flour mixture to the butter mixture, alternating with milk, beginning and ending with the flour mixture. Mix until just combined.
Fold in the diced strawberries.
Pour half of the batter into the prepared loaf pan. Spread the strawberry jam over the batter, then pour the remaining batter over the jam.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For the glaze, whisk together the powdered sugar and strawberry puree until smooth. Drizzle the glaze over the cooled loaf cake.
Garnish with fresh strawberries before serving.
