Grilled salmon skewers with creamy dill yogurt sauce
Ingredients:
For the salmon skewers:
1.5lb salmon fillet, cut into 1 inch cubes
2 tablespoons of the olive oil
2 tablespoons of lemon juice
2 chopped garlic cloves
1 teaspoon of dried dill
1 teaspoon smoked paprika
Salt and pepper to taste
1 red pepper, cut into 1 inch pieces
1 yellow pepper, cut into 1-inch pieces
1 red onion, cut into wedges
12-16 wooden or metal skewers
For the creamy dill yogurt sauce:
1 cup plain Greek yogurt
1 tablespoon of lemon juice
1 tablespoon of fresh dill, chopped
1 clove of garlic minced
Salt and pepper to taste
Instructions:
Prepare the marinade: In a large bowl, combine olive oil, lemon juice, minced garlic, dried dill, smoked paprika, salt and pepper. Add the salmon cubes and toss to cover evenly. Cover and refrigerate for at least 30 minutes.
Prepare the skewers: If you use wooden skewers, soak them in water for at least 30 minutes to prevent them from burning. Thread the marinated salmon cubes, red pepper pieces, yellow pepper pieces and red onion wedges onto the skewers, alternating between the different ingredients.
Preheat the Grill: Preheat your grill to medium-high heat. Brush grids with oil to prevent them from sticking.
Grill the Skewers: Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender.
Prepare Creamy Dill Yogurt Sauce: In a small bowl, combine Greek yogurt, lemon juice, fresh dill, minced garlic, salt and pepper. Mix well and refrigerate until ready to serve.
Serve: Remove the skewers from the grill and let them rest a few minutes before serving. Serve hot grilled salmon skewers, with creamy dill yogurt sauce on the side.
