Slow Cooker Chicken with Flour Coating
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 cup heavy cream or half-and-half
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Chicken:
- Mix the Flour Coating:
- In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika.
- Coat the Chicken:
- Dredge each chicken breast in the flour mixture, ensuring it’s evenly coated. Shake off any excess flour.
Brown the Chicken:
- Heat the Oil:
- In a large skillet, heat the olive oil over medium-high heat.
- Sear the Chicken:
- Add the coated chicken breasts to the skillet and sear for 2-3 minutes on each side until golden brown. (You do not need to cook the chicken through, just get a nice crust.)
Slow Cook the Chicken:
- Add Ingredients to Slow Cooker:
- Transfer the seared chicken breasts to the slow cooker.
- Pour the chicken broth and heavy cream over the chicken.
- Add the minced garlic, dried thyme, and dried rosemary.
- Cook:
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and cooked through.
Finish and Serve:
- Add Parmesan Cheese:
- 30 minutes before serving, sprinkle the grated Parmesan cheese over the chicken and stir slightly to combine.
- Garnish:
- Once the chicken is done, garnish with fresh parsley.
- Serve:
- Serve the chicken hot, with your choice of sides such as mashed potatoes, rice, or steamed vegetables.
