 Chocolate and strawberry cheesecake
Ingredients :
– 2 cups of chocolate chip cookies
– 1/2 cup of unsalted butter melted
– 3 packs of cream cheese
– 1 cup of granulated sugar
– 1 teaspoon of vanilla extract
– 3 large eggs
– 1 cup of sour cream
– 1/2 cup of heavy cream
– 1 cup semi-sweet chocolate chips, melted and slightly cooled
– 1 cup of fresh mashed strawberries
– 2 tablespoons of granulated sugar
Instructions:
1. Preheat the oven to 325°F (163°C). Greasing a 9 inch spring frying pan.
2. In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
3. In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth and creamy.
4. Add vanilla extract and mix well.
5. Add the eggs, one at a time, beating well after each addition.
6. Mix the sour cream and heavy cream until the mixture is smooth.
7. Stir in the melted chocolate until fully incorporated.
8. Pour half of the cheesecake batter over the crust in the spring pan.
9. In a small bowl, mix the puree strawberries with 2 tablespoons of sugar.
10. Spoon the strawberry mixture onto the batter into small dolls.
11. Pour the rest of the cheesecake batter over the layer of strawberries.
12. Use a knife to gently swirl the strawberry mixture into the cheesecake batter to create a marbled effect.
13. Bake in a preheated oven for 55-60 minutes, or until the center is just set and the top appears slightly dry.
14. Let the cheesecake cool in the oven with the door slightly open for 1 hour. Then refrigerate for at least 4 hours or overnight.
