Beef Enchiladas

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 8 large flour tortillas

Optional Toppings:

  • Sour cream
  • Guacamole
  • Chopped cilantro
  • Sliced green onions
  • Diced tomatoes

Instructions:

Preheat Oven:

  1. Preheat your oven to 375°F (190°C).

Prepare Filling:

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add the diced onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
  3. Stir in the ground cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for another minute.
  4. Add the diced green chilies and black beans. Mix well and cook for another 2-3 minutes until heated through.

Assemble Enchiladas:

  1. Spread a thin layer of enchilada sauce (about 1/2 cup) on the bottom of a 9×13 inch baking dish.
  2. Place a scoop of the beef mixture in the center of each flour tortilla. Sprinkle some shredded cheddar and Monterey Jack cheese over the beef mixture.
  3. Roll up the tortillas tightly and place them seam-side down in the baking dish.
  4. Pour the remaining enchilada sauce over the top of the rolled enchiladas, spreading it evenly.
  5. Sprinkle the remaining shredded cheese over the top.

Bake Enchiladas:

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Serve:

  1. Remove from the oven and let cool for a few minutes before serving.
  2. Serve with optional toppings such as sour cream, guacamole, chopped cilantro, sliced green onions, and diced tomatoes.
