Pineapple Bread
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 can (8 oz) crushed pineapple, undrained
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup shredded coconut (optional)
Instructions:
Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
Prepare Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
Prepare Wet Ingredients:
- In another bowl, beat the eggs. Add the vegetable oil, vanilla extract, and crushed pineapple with its juice. Mix well.
Combine Ingredients:
- Pour the wet ingredients into the dry ingredients. Stir until just combined.
- If using, fold in the chopped nuts and shredded coconut.
Bake:
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
- If the top starts to brown too quickly, cover it loosely with aluminum foil for the remaining baking time.
Cool:
- Remove the bread from the oven and let it cool in the pan for about 10 minutes.
- Transfer the bread to a wire rack to cool completely before slicing.
