Apple Fritter Bites
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2/3 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (about 2 medium apples)
- Vegetable oil, for frying
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
Prepare the Batter:
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg.
- In another bowl, combine the milk, eggs, and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Gently fold in the diced apples until evenly distributed.
Fry the Fritter Bites:
- Heat vegetable oil in a deep fryer or large, deep skillet to 350°F (175°C).
- Carefully drop spoonfuls of batter (about 1 tablespoon each) into the hot oil, a few at a time. Do not overcrowd the pan.
- Fry the fritter bites for about 2-3 minutes on each side, or until golden brown and cooked through.
- Use a slotted spoon to remove the fritter bites from the oil and transfer them to a paper towel-lined plate to drain excess oil.
Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Add more milk if needed to reach the desired consistency.
Glaze the Fritter Bites:
- Dip each warm fritter bite into the glaze, turning to coat completely. Place the glazed fritter bites on a wire rack set over a baking sheet to allow the glaze to set.
Serve:
- Allow the glaze to set for a few minutes before serving. Enjoy these delicious apple fritter bites warm!
