Ingredients:

  • 4 small onions (about 2-3 inches in diameter)
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup buttermilk
  • Cooking spray

For the Dipping Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

Prepare the Onions:

  1. Cut off the top (stem end) of each onion and peel off the outer skin. Leave the root end intact to hold the onion together.
  2. Place the onion cut side down. Starting 1/2 inch from the root, make a downward cut all the way through to the cutting board. Repeat to make four evenly spaced cuts around the onion. Continue cutting to create 8-12 wedges, being careful not to cut through the root.
  3. Gently separate the layers of the onion to create the “bloom” effect.

Prepare the Coating:

  1. In a medium bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, and black pepper.
  2. In another bowl, whisk together the eggs and buttermilk.

Coat the Onions:

  1. Dip each onion into the flour mixture, making sure to coat all the layers. Shake off any excess flour.
  2. Dip the floured onion into the egg mixture, making sure to coat thoroughly.
  3. Dip the onion back into the flour mixture, coating evenly. Shake off any excess flour.
