- 12-15 raw shrimp, tail off and deveined
- 4 cups day-old cold cooked rice
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 3 green onions, sliced
- 3 eggs, lightly beaten
- 3 cloves garlic, minced
- 5 tablespoons soy sauce, divided
- 1 tablespoon sugar
- 1 tablespoon brown sugar, divided
- 4 tablespoons oil, divided
- Yum yum sauce, for serving
Directions:
- Prepare the Steak and Shrimp:
- In a small bowl, toss the ribeye pieces with 1 tablespoon of soy sauce and 1/2 tablespoon of brown sugar. Set aside.
- In another bowl, toss the shrimp with 1 tablespoon of soy sauce and 1/2 tablespoon of brown sugar. Set aside.
- Cook the Steak:
- Heat 2 tablespoons of oil in a large wok or skillet over medium-high heat.
- Add the steak pieces and cook for about 1 minute per side, or until browned. Remove the steak from the pan and set aside.
- Cook the Shrimp:
- In the same pan, add the shrimp and cook for 2-3 minutes on each side, or until they form a nice “C” shape. Remove from the pan and set aside.
- Sauté Vegetables and Garlic:
- Add the remaining 2 tablespoons of oil to the pan.
- Add the chopped carrots and onions. Cook for 3-4 minutes until they begin to soften.
- Add the minced garlic and cook for an additional minute. Push the vegetables to one side of the pan.
- Scramble the Eggs:
- Pour the beaten eggs into the empty side of the pan.
- Scramble the eggs until cooked through, then mix them with the vegetables.
- Add Rice and Seasonings:
- Add the day-old cold rice to the pan, breaking it up with a spatula.
- Stir in the remaining 3 tablespoons of soy sauce and 1 tablespoon of sugar. Mix thoroughly.
- Combine Everything:
- Return the cooked steak and shrimp to the pan.
- Stir in the sliced green onions and cook for an additional 1-2 minutes, until everything is well combined and heated through.
- Serve:
- Serve the fried rice hot, with a drizzle of yum yum sauce on the side for added flavor.
Notes:
- Day-Old Rice: Using cold, day-old rice helps to achieve the perfect texture for fried rice, making it less likely to become mushy.
- Vegetable Variations: Feel free to add other vegetables like peas or bell peppers based on your preference.
- Spice It Up: For a bit of heat, add some red pepper flakes or sriracha to the soy sauce mixture.
