Ingredients:

  • 1 ribeye steak, cut into bite-sized pieces
  • 12-15 raw shrimp, tail off and deveined
  • 4 cups day-old cold cooked rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 3 green onions, sliced
  • 3 eggs, lightly beaten
  • 3 cloves garlic, minced
  • 5 tablespoons soy sauce, divided
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar, divided
  • 4 tablespoons oil, divided
  • Yum yum sauce, for serving

Directions:

  1. Prepare the Steak and Shrimp:
    • In a small bowl, toss the ribeye pieces with 1 tablespoon of soy sauce and 1/2 tablespoon of brown sugar. Set aside.
    • In another bowl, toss the shrimp with 1 tablespoon of soy sauce and 1/2 tablespoon of brown sugar. Set aside.
  2. Cook the Steak:
    • Heat 2 tablespoons of oil in a large wok or skillet over medium-high heat.
    • Add the steak pieces and cook for about 1 minute per side, or until browned. Remove the steak from the pan and set aside.
  3. Cook the Shrimp:
    • In the same pan, add the shrimp and cook for 2-3 minutes on each side, or until they form a nice “C” shape. Remove from the pan and set aside.
  4. Sauté Vegetables and Garlic:
    • Add the remaining 2 tablespoons of oil to the pan.
    • Add the chopped carrots and onions. Cook for 3-4 minutes until they begin to soften.
    • Add the minced garlic and cook for an additional minute. Push the vegetables to one side of the pan.
  5. Scramble the Eggs:
    • Pour the beaten eggs into the empty side of the pan.
    • Scramble the eggs until cooked through, then mix them with the vegetables.
  6. Add Rice and Seasonings:
    • Add the day-old cold rice to the pan, breaking it up with a spatula.
    • Stir in the remaining 3 tablespoons of soy sauce and 1 tablespoon of sugar. Mix thoroughly.
  7. Combine Everything:
    • Return the cooked steak and shrimp to the pan.
    • Stir in the sliced green onions and cook for an additional 1-2 minutes, until everything is well combined and heated through.
  8. Serve:
    • Serve the fried rice hot, with a drizzle of yum yum sauce on the side for added flavor.

  • Day-Old Rice: Using cold, day-old rice helps to achieve the perfect texture for fried rice, making it less likely to become mushy.
