Ultramel Scones

 

Ingredients:

  • 7 cups cake flour
  • 7 teaspoons baking powder
  • 4 large eggs
  • 1 ½ cups sugar
  • 1 cup butter, chilled and cubed
  • 2 cups Ultramel custard (or any vanilla-flavored custard)
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt
  • Extra flour for dusting
  • Extra Ultramel custard for serving (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the cake flour, baking powder, and a pinch of salt. Whisk together to ensure even distribution of the baking powder.
  3. Cut in Butter: Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
  4. Beat Eggs and Sugar: In a separate bowl, beat the eggs and sugar together until the mixture is light and fluffy.
  5. Combine Wet and Dry Ingredients: Add the egg and sugar mixture to the flour and butter mixture. Stir until just combined.
  6. Add Custard: Pour in the Ultramel custard and vanilla extract (if using). Gently mix until the dough comes together. Be careful not to overmix.
  7. Knead and Shape Dough: Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it together. Pat the dough into a rectangle about 1 inch thick.
  8. Cut Scones: Using a floured biscuit cutter or a knife, cut the dough into scones. Place the scones on the prepared baking sheet, leaving a little space between each one.
  9. Bake: Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  10. Cool and Serve: Allow the scones to cool slightly on a wire rack. Serve warm or at room temperature with extra Ultramel custard if desired.
