My Daily Delight: Hearty Vegetable Soup

I cook this vegetable soup to eat every day! The soup is so delicious, packed with vibrant vegetables, and is both nourishing and satisfying. It’s a simple, wholesome recipe that warms the soul and keeps you coming back for more.

Ingredients:

  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 1 carrot, grated
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 3 potatoes, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preparation:
    • Heat the olive oil in a large pot over medium heat.
    • Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Adding Vegetables:
    • Add the grated carrot, green pepper, red pepper, and yellow pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Cooking the Potatoes:
    • Add the diced potatoes to the pot and stir to combine with the other vegetables.
  4. Building the Soup:
    • Pour in the vegetable broth and diced tomatoes. Stir in the minced garlic, dried thyme, and dried oregano.
    • Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the potatoes are tender.
  5. Final Seasoning:
    • Season the soup with salt and pepper to taste.
    • If desired, garnish with fresh chopped parsley before serving.
