I made egg rolls today, and not only are they delicious, but they are also easy and cheap to make! For about $10.00, you can make 25 egg rolls. Here’s what you’ll need:

Ingredients:

  • 1 lb ground beef, pork, chicken, or turkey
  • 1 lb shredded carrots
  • 1/2 of a small cabbage, shredded
  • 1 (12 oz) package of bean sprouts
  • 1/2 onion, finely chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons cooking oil
  • Salt and pepper to taste
  • 1 package of egg roll wrappers (25 sheets)
  • 2 eggs (as a binding agent)
  • Cooking oil (for frying)

Instructions:

1. Prepare the Filling:

  • Heat 2 tablespoons of cooking oil in a large skillet over medium heat.
  • Sauté the chopped onion until it becomes translucent.
  • Add the ground meat of your choice and cook until browned, stirring frequently.
  • Add the shredded carrots, bean sprouts, shredded cabbage, and soy sauce to the skillet. Stir to combine.
  • Cover the skillet and cook for a few minutes until the vegetables are tender but still slightly crisp.
  • Beat the eggs and add them to the mixture. Quickly stir to combine, and turn off the heat to stop the cooking process. You don’t want to overcook the vegetables.
  • Season with salt and pepper to taste.
  • Drain any excess liquid and allow the mixture to cool.

2. Assemble the Egg Rolls:

  • Lay out an egg roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape).
  • Place about 1 1/2 tablespoons of the filling mixture near the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner.
  • Use a bit of water or a beaten egg to seal the top corner.

3. Fry the Egg Rolls:

  • Heat enough oil in a deep frying pan or pot to submerge the egg rolls.
  • Once the oil is hot (around 350°F/175°C), carefully add a few egg rolls at a time, being careful not to overcrowd the pan.
  • Fry the egg rolls until they are golden brown and crispy, about 2-3 minutes per side.
  • Remove the egg rolls with a slotted spoon and drain on paper towels.

4. Serve:

  • Serve the egg rolls hot with your favorite sweet and sour sauce.

Tips:

  • Make sure not to overfill the egg roll wrappers to prevent them from bursting while frying.
