Easy and Delicious Homemade Egg Rolls
I made egg rolls today, and not only are they delicious, but they are also easy and cheap to make! For about $10.00, you can make 25 egg rolls. Here’s what you’ll need:
Ingredients:
- 1 lb ground beef, pork, chicken, or turkey
- 1 lb shredded carrots
- 1/2 of a small cabbage, shredded
- 1 (12 oz) package of bean sprouts
- 1/2 onion, finely chopped
- 2 tablespoons soy sauce
- 2 tablespoons cooking oil
- Salt and pepper to taste
- 1 package of egg roll wrappers (25 sheets)
- 2 eggs (as a binding agent)
- Cooking oil (for frying)
Instructions:
1. Prepare the Filling:
- Heat 2 tablespoons of cooking oil in a large skillet over medium heat.
- Sauté the chopped onion until it becomes translucent.
- Add the ground meat of your choice and cook until browned, stirring frequently.
- Add the shredded carrots, bean sprouts, shredded cabbage, and soy sauce to the skillet. Stir to combine.
- Cover the skillet and cook for a few minutes until the vegetables are tender but still slightly crisp.
- Beat the eggs and add them to the mixture. Quickly stir to combine, and turn off the heat to stop the cooking process. You don’t want to overcook the vegetables.
- Season with salt and pepper to taste.
- Drain any excess liquid and allow the mixture to cool.
2. Assemble the Egg Rolls:
- Lay out an egg roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape).
- Place about 1 1/2 tablespoons of the filling mixture near the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner.
- Use a bit of water or a beaten egg to seal the top corner.
3. Fry the Egg Rolls:
- Heat enough oil in a deep frying pan or pot to submerge the egg rolls.
- Once the oil is hot (around 350°F/175°C), carefully add a few egg rolls at a time, being careful not to overcrowd the pan.
- Fry the egg rolls until they are golden brown and crispy, about 2-3 minutes per side.
- Remove the egg rolls with a slotted spoon and drain on paper towels.
4. Serve:
- Serve the egg rolls hot with your favorite sweet and sour sauce.

Tips:
- Make sure not to overfill the egg roll wrappers to prevent them from bursting while frying.
- If you prefer to bake the egg rolls for a healthier option, brush them with a little oil and bake at 400°F (200°C) for 15-20 minutes, turning halfway through, until they are crispy and golden brown.
