Hawaiian Style Teriyaki Chicken Recipe
Ingredients
For the Marinade:
- 1 cup soy sauce
- 1 cup water
- 1 cup brown sugar
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup pineapple juice
- 1 tablespoon rice vinegar (optional)
- 1 tablespoon sesame oil
For the Chicken:
- 4-6 boneless, skinless chicken thighs or breasts
- 2 tablespoons vegetable oil
- Sliced green onions for garnish (optional)
- Sesame seeds for garnish (optional)
Instructions
- Prepare the Marinade:
- In a mixing bowl, combine soy sauce, water, brown sugar, honey, minced garlic, grated ginger, pineapple juice, rice vinegar (if using), and sesame oil. Stir well until the sugar is dissolved.
- Marinate the Chicken:
- Place the chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated.
- Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for best flavor.
- Cook the Chicken:
- Preheat the grill to medium-high heat. Alternatively, you can use a stovetop grill pan.
- Remove the chicken from the marinade and pat it dry with paper towels. Reserve the marinade for later use.
- Brush the grill grates with vegetable oil to prevent sticking. Grill the chicken for about 5-7 minutes on each side, or until fully cooked and slightly charred.
- Prepare the Teriyaki Sauce:
- While the chicken is grilling, pour the reserved marinade into a small saucepan. Bring it to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 5 minutes, or until it thickens into a sauce. Stir occasionally to prevent burning.
- Serve:
- Slice the grilled chicken and place it on a serving platter. Drizzle the thickened teriyaki sauce over the chicken.
- Garnish with sliced green onions and sesame seeds if desired.
- Serve with steamed rice and vegetables for a complete meal.
