**Ingredients:**

– 18 large eggs

– 1 cup full-fat cottage cheese

– 1 cup grated cheese (cheddar, Monterey Jack, or your choice)

– 1 red bell pepper, diced

– 1 yellow bell pepper, diced

– 2-3 tablespoons chopped chives

– 10 slices cooked bacon, crumbled (optional)

– Salt and pepper, to taste

– Avocado spray (for greasing the cups)

 

**Instructions:**

1. **Preheat Oven:** Preheat your oven to 350°F (175°C).

 

2. **Prepare Add-Ins:** Cook the bacon until crispy, then crumble it. Dice the bell peppers and chop the chives.

 

3. **Blend Mixture:** In a large bowl, whisk together the eggs and cottage cheese until well combined. Stir in the grated cheese, bell peppers, chives, and crumbled bacon. Season with salt and pepper to taste.

 

4. **Blend Until Fluffy:** For a smoother texture, you can blend the egg mixture using an immersion blender or a regular blender until it’s fluffy and well combined.

 

5. **Prepare Silicone Cups:** Spray the silicone egg bite cups with avocado spray to prevent sticking.

 

6. **Fill Cups:** Pour the egg mixture evenly into the prepared silicone cups.

 

7. **Bake:** Place the filled silicone cups on a baking sheet and bake in the preheated oven for 30 minutes, or until the egg bites are set and slightly golden on top.

 

8. **Cool and Serve:** Allow the egg bites to cool slightly before removing them from the silicone cups. Serve warm or store in the refrigerator for up to a week.
