### Ingredients:

– 1 cup mixed vegetables (e.g., grated carrots, zucchini, spinach, corn)

– 1/2 cup grated cheese (cheddar, mozzarella, or a mix)

– 1/2 cup all-purpose flour

– 1/4 cup breadcrumbs

– 1 large egg

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

– 1/2 teaspoon paprika (optional)

– Salt and pepper to taste

– Oil for frying

 

### Instructions:

 

1. **Prepare the Vegetables**:

– Grate or finely chop the vegetables. If using watery vegetables like zucchini, squeeze out excess moisture using a clean towel.

 

2. **Mix the Batter**:

– In a large bowl, combine the grated vegetables, cheese, flour, breadcrumbs, egg, garlic powder, onion powder, paprika (if using), salt, and pepper. Mix until well combined.

 

3. **Shape the Fritters**:

– Take a small handful of the mixture and shape it into a patty or ball, depending on your preference. Continue until all the mixture is used.

 

4. **Fry the Fritters**:

– Heat oil in a large skillet over medium heat. Once hot, add the fritters in batches, being careful not to overcrowd the pan.

– Fry for 3-4 minutes on each side, or until golden brown and crispy.

 

5. **Drain and Serve**:

– Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

– Serve hot with your favorite dipping sauce.
