Mushroom Rice recipe

 

### **Mushroom Rice**

 

**Ingredients:**

– 2 tbsp unsalted butter

– 1 onion, finely chopped

– 2 garlic cloves, minced

– 600g (1.3 lbs) mushrooms, sliced

– 1 cup long grain white rice, uncooked

– 1 1/2 cups chicken broth

– 3/4 cup water

– 1 tsp salt

– 1/4 tsp black pepper

– 2 tbsp fresh parsley, chopped

 

**Instructions:**

1. Melt the butter in a large saucepan over medium-high heat.

2. Add the onion and garlic, and sauté until softened, about 3 minutes.

3. Add the mushrooms and cook until they release their juices and become golden, about 5 minutes.

4. Stir in the uncooked rice and mix well with the mushroom mixture.

5. Pour in the chicken broth, water, salt, and pepper. Stir to combine.

6. Bring to a simmer, then reduce the heat to low. Cover and cook for 15 minutes, or until the rice is tender and the liquid is absorbed.

7. Remove from heat and let sit, covered, for 5 minutes.

8. Fluff the rice with a fork and stir in the fresh parsley before serving.
