Ingredients:

  • 2 lbs pickling cucumbers ๐Ÿฅ’
  • 2 cups water ๐Ÿ’ง
  • 1 cup white vinegar ๐Ÿถ
  • 1 tablespoon sugar ๐Ÿฌ
  • 2 tablespoons pickling salt ๐Ÿง‚
  • 2 cloves garlic, smashed ๐Ÿง„
  • 1 teaspoon mustard seeds ๐ŸŒผ
  • 1/2 teaspoon red pepper flakes ๐ŸŒถ๏ธ

๐Ÿฅ„ Instructions:

Prepare cucumbers

Wash cucumbers well and cut them into spears or leave them whole if theyโ€™re small.

Sterilize jar

Wash a quart-size Mason jar with hot soapy water and rinse.

Make brine

In a saucepan, combine water, vinegar, sugar, and pickling salt. Heat just until the sugar and salt dissolve, then let cool to room temperature.

Pack the jar

Place garlic, mustard seeds, and red pepper flakes at the bottom of the jar.

Pack in the cucumbers tightly.

Add brine

Pour cooled brine over cucumbers until theyโ€™re completely covered. Leave a little space at the top of the jar.

Seal & store

Close with a lid. Store in the refrigerator.

Wait & enjoy

Let pickles sit at least 3โ€“4 days for best flavor (they get stronger the longer they sit).
