Homemade ๐ Claussen Pickles ๐ฅ
Ingredients:
- 2 lbs pickling cucumbers ๐ฅ
- 2 cups water ๐ง
- 1 cup white vinegar ๐ถ
- 1 tablespoon sugar ๐ฌ
- 2 tablespoons pickling salt ๐ง
- 2 cloves garlic, smashed ๐ง
- 1 teaspoon mustard seeds ๐ผ
- 1/2 teaspoon red pepper flakes ๐ถ๏ธ
๐ฅ Instructions:
Prepare cucumbers
Wash cucumbers well and cut them into spears or leave them whole if theyโre small.
Sterilize jar
Wash a quart-size Mason jar with hot soapy water and rinse.
Make brine
In a saucepan, combine water, vinegar, sugar, and pickling salt. Heat just until the sugar and salt dissolve, then let cool to room temperature.
Pack the jar
Place garlic, mustard seeds, and red pepper flakes at the bottom of the jar.
Pack in the cucumbers tightly.
Add brine
Pour cooled brine over cucumbers until theyโre completely covered. Leave a little space at the top of the jar.
Seal & store
Close with a lid. Store in the refrigerator.
Wait & enjoy
Let pickles sit at least 3โ4 days for best flavor (they get stronger the longer they sit).
๐ These are refrigerator pickles (not canned), so keep them cold. Theyโll last about 1โ2 months in the fridge.
