Homemade π Claussen Pickles π₯
Ingredients:
- 2 lbs pickling cucumbers π₯
- 2 cups water π§
- 1 cup white vinegar πΆ
- 1 tablespoon sugar π¬
- 2 tablespoons pickling salt π§
- 2 cloves garlic, smashed π§
- 1 teaspoon mustard seeds πΌ
- 1/2 teaspoon red pepper flakes πΆοΈ
π₯ Instructions:
Prepare cucumbers
Wash cucumbers well and cut them into spears or leave them whole if theyβre small.
Sterilize jar
Wash a quart-size Mason jar with hot soapy water and rinse.
Make brine
In a saucepan, combine water, vinegar, sugar, and pickling salt. Heat just until the sugar and salt dissolve, then let cool to room temperature.
Pack the jar
Place garlic, mustard seeds, and red pepper flakes at the bottom of the jar.
Pack in the cucumbers tightly.
Add brine
Pour cooled brine over cucumbers until theyβre completely covered. Leave a little space at the top of the jar.
Seal & store
Close with a lid. Store in the refrigerator.
Wait & enjoy
Let pickles sit at least 3β4 days for best flavor (they get stronger the longer they sit).
π These are refrigerator pickles (not canned), so keep them cold. Theyβll last about 1β2 months in the fridge.
