Homemade 🐊 Claussen Pickles 🥒

Ingredients:

  • 2 lbs pickling cucumbers 🥒
  • 2 cups water 💧
  • 1 cup white vinegar 🍶
  • 1 tablespoon sugar 🍬
  • 2 tablespoons pickling salt 🧂
  • 2 cloves garlic, smashed 🧄
  • 1 teaspoon mustard seeds 🌼
  • 1/2 teaspoon red pepper flakes 🌶️

🥄 Instructions:

Prepare cucumbers

Wash cucumbers well and cut them into spears or leave them whole if they’re small.

Sterilize jar

Wash a quart-size Mason jar with hot soapy water and rinse.

Make brine

In a saucepan, combine water, vinegar, sugar, and pickling salt. Heat just until the sugar and salt dissolve, then let cool to room temperature.

Pack the jar

Place garlic, mustard seeds, and red pepper flakes at the bottom of the jar.

Pack in the cucumbers tightly.

Add brine

Pour cooled brine over cucumbers until they’re completely covered. Leave a little space at the top of the jar.

Seal & store

Close with a lid. Store in the refrigerator.

Wait & enjoy

Let pickles sit at least 3–4 days for best flavor (they get stronger the longer they sit).

👉 These are refrigerator pickles (not canned), so keep them cold. They’ll last about 1–2 months in the fridge.
