๐ Lemon Layer Cake
Ingredients
For the Cake:
1 box lemon cake mix
1 cup milk
1/2 cup unsalted butter, melted
3 large eggs
1 tablespoon lemon zest
For the Lemon Filling:
1 cup lemon curd
1/2 cup whipped cream
For the Lemon Buttercream Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
2โ3 tablespoons milk
For Decoration:
Lemon slices
Lemon zest
Instructions
Preheat oven to 350ยฐF (175ยฐC).
Mix cake mix, milk, melted butter, eggs, and lemon zest until smooth.
Divide batter between two 8-inch cake pans.
Bake for 25โ30 minutes. Let cool completely.
Mix lemon curd and whipped cream for the filling.
Beat butter, powdered sugar, lemon juice, vanilla, and milk until fluffy.
Place one cake layer on a serving plate, spread the lemon filling, then add the second layer.
Frost the entire cake with the lemon buttercream.
Decorate with lemon slices and lemon zest.
Chill for 30 minutes before serving.
