Instructions
1. Prepare the batter

Add salt, pepper, and any optional spices.
Beat well until the yolks and whites are fully combined.
Add flour and mix until smooth.
Stir in onion, chili, and coriander if using.
If the batter seems too thick, add 1–2 tablespoons of water. The consistency should be similar to pancake batter.
2. Heat the oil
Pour about 1 cm (½ inch) of oil into a frying pan.
Heat over medium heat.
To test, drop a tiny bit of batter into the oil—it should sizzle immediately.
3. Fry the fritters
Spoon small portions of batter into the hot oil.
Fry for 2–3 minutes on one side until golden brown.
Flip and fry another 2 minutes.
Remove and place on paper towels to drain excess oil.
